Fire Pit

I know I am really late in posting this information, but I found the photos on my phone while I was home sick the last couple days with strep throat and thought I would share.

For Christmas my parents gave Taylor a gift card for a fire pit to place on our backyard patio (aka tiny piece of concrete). He as wanted one for awhile now so when he finally got to pick one out in January, he was very excited.


Some of our friends from Chicago came down about mid-January so we put the fire pit together...


...and enjoyed a warm fire on the patio. And of course no proper fire is complete without s'mores so we enjoyed those as well! The temperature is getting to a place where I think we will be able to enjoy sitting outside by the fire and not be freezing, so we are both looking forward to that.

Freezer Breakfast Burritos

I found a recipe for freezer breakfast burritos on Pinterest a couple weeks ago and I am happy to say they are delicious! They were super simply to make and warm up perfectly in the microwave so I thought I would share the recipe.

Freezer Breakfast Burritos
(I forgot to take photos of our burritos so I am just using a few from the website. I am sure that is some sort of blogging no-no, but oh well.)

Here is a list of ingredients for a full batch but I only made half this time since I wasn't sure how they would turn out (with my adjustments in bold):
  • 2 lbs. bacon, diced
  • 2 lbs. breakfast sausage
  • 1 large onion, diced small
  • 1 cup diced bell pepper
  • 20 eggs
  • 36 fajita sized flour tortillas
  • 1 (8 oz.) bag shredded cheddar cheese
(Next time I think I might leave out the bacon. Unless you just really love bacon, I didn't really feel it was necessary to the recipe.)

Here are the directions from the website:

In a large skillet cook the bacon until browned. Drain grease from bacon and set aside on a plate with a few paper towels to absorb the grease. In the same skillet brown and crumble the sausage until cooked through. Drain grease from sausage and set it aside on another plate with a few paper towels to absorb the excess grease.

Using the same skillet saute the onion and bell pepper till the onion is translucent and the peppers are soft yet a little crisp. While the onion and bell pepper are cooking, crack and scramble the eggs. For large quantities of eggs like this, I like to scramble them in my blender (I did this and it was a great idea!). Once the bell peppers and onion are cooked add the eggs and cook just as you would for scrambled eggs, stirring the egg mixture while cooking until they are cooked through, being careful not to over cook the eggs. Then add the cooked bacon and sausage to the eggs.

Turn off the heat to the pan and sprinkle egg mixture with cheese. Cover pan and let it sit for about 5 minutes to let the cheese melt. In a frying pan (I used the microwave) warm your tortillas one at a time and proceed to make your breakfast burritos. Always warm your tortillas first to prevent them from cracking while folding your burritos. Use about 1/4 cup of filling for each burrito (this was a pretty good amount for each burrito).

Breakfast Burritos - Step 7 - Fold Burritos

Continue making burritos until you run out of either filling or tortillas. Once all of your burritos are made, wrap each one in plastic wrap and place into labeled freezer bags and seal, removing as much air as possible. Frozen burritos will store for 2-3 months in regular freezer bags.

To eat, unwrap a burrito and place on microwave safe plate. Cover loosly with the plastic wrap and microwave for 1 minute, flip over and cook one more minute (you really only need to microwave for 1 minute or the burritos get hard). Serve with Tabasco or salsa if desired.

Taylor really likes taking these because it's easy to grab one or two before leaving the house and then just warm them up at school. Try these out if you are interested in a simply, quick, and yummy breakfast for on the go!

Love Story

I know this is going to be really sappy, but I saw this link up on a blog I look at from time to time and thought it would be a fun idea! Most of you probably know all these answers already, but I tried to include some fun pictures from the past and present. I apologize for the photos being really huge!

1. How long have you and your significant other been together?
5 1/2 years. Whoa, I didn't realize it had been that long!

2. How did you meet? {What's your "love" story?}
We met during Welcome Week at OBU our freshman year!

3. If married, how long have you been married?
We have been married since May 22, 2010, so about 1 1/2 years.

4. If you are married, where did you get married at? Big or small wedding?
We were married in Tulsa, OK at Camp Loughridge and had about 175 (I think!) people at the wedding.
5. Do you have any nick-names that you call one another? Do share!
No, just Taylor and Jamie :)

6. Name 3 things you love most about your husband.
He challenges my ideas (this is one of those I love that quality/it drives me crazy sometimes!), he has a heart for the Lord and serving others, he always tries to do what is best for me.

7. Tell us how he proposed?
About 8 of my friends went down to Destin, FL to celebrate my friend Brittni graduating. Little did I know (or anything of the other girls except 2) that Taylor had actually planned the whole trip! On our final day, we were headed to a restaurant along the beach and Taylor ended up surprising me and proposed on the beach. After I said yes I heard a lot of cheering and looked up to see that both of our families, my grandma, and our family friends the Massey's were all there as well! It was (in my opinion) the best proposal ever :)


8. Is he a flowers and teddy bear kind of guy for v-day, or strawberries, champagne, and rose petals?
Neither, but he ususally buys gerber daises if he does purchase flowers since those were our wedding flowers.

9. Are you a sunset dinner on the beach kind of girl, or pop a movie in and relax on the couch?
100% watch a movie and relax at home.

10. Tell us one thing you'd like to do with your significant one day. If you could do anything? Go anywhere?
We want to take a 2 week long road trip starting from Northern California and making our way down highway 1 and then back to OK/AR. We are hoping to do this after Taylor graduates!

11. Tell us what you plan on doing on this Valentine's Day.
We have reservations at Silver Creek in CU. We have wanted to try their dinner menu out since we moved here and we love their lunch options so much, so we figured today would be the perfect time!

12. Are you asking for anything this Valentine's day?
No, we hardly ever exchange gifts for holidays. Maybe someday we will, but since we have been dating/married that's just not something we do very often.

13. Give us one piece of advice on keeping a relationship strong and full of love.
Always try to seek the Lord's desire and direction for your relationship/life.

14. Show us a picture of what love means to you.
