Party People

So over the last few weeks Taylor and I have been attending multiple Christmas parties! I feel like I have had a somewhat active social life lately. Ha! Two Fridays ago, we went over to Taylor's research professor's house for his groups Christmas party. We pretty much just sat around talking and drinking yummy wassail! I had never had wassail before and it is so good.

The next night we had our friends over to the house for a white elephant gift exchange! I ended up getting a bottle of nail polish from Laine and Taylor wound up with this trophy that says "#1 Balla!" Keith brought Ha. It was really funny!


And last Friday, we went over to my director's house for our office Christmas party. It was nice to see people outside of an office environment so you can get to know them better. That day at work we also had a building wide gift exchange. Everyone who was participating had a balloon on their cube and gift sitting on the floor.

Basically, all day long if you saw a gift that appealed to you, then you could swap the one outside your cube for it! It was fun to see which gifts everyone wanted and then once we opened everything what they ended up being. I ended up receiving an ornament that had reindeer poop on it that is supposed to guide Santa's sleigh to your house on Christmas eve! Ha.

Wrapped up...

Well, I finally got all of our presents wrapped! I forgot how much time it takes to wrap presents. This year I went simple with the wrapping paper and used tulle so the bows wouldn't get smashed during our 9 1/2 hour drive to OK. A couple years ago my mom used brown mailing paper to wrap our presents and I thought that was so smart. First, it's cheap. An entire roll costs $5 and wraps a billion gifts! So that's a slight exaggeration, but you get the idea.


Next, it travels well. Last year a lot of our gifts were torn after the drive so I thought this paper would be a much better idea because it's sturdy.


Third, since the paper is simple you can use all kinds of ribbons or tulle to the make the gifts look pretty!


Finally, you could (if you were crafty and I am not) decorate the paper however you wanted to! I just wrote everyone's name on the gifts but you could stamps or stickers, etc.

We are so excited for Friday to get here and to head back to OK and AR! I get off work Friday at noon and don't go back until January 3rd. Wahooo! This will be the first time since we moved up here that I have had an entire week off and I'm so excited. We are looking forward to seeing you all soon :)

Party Sandwiches, Potato Soup, Fruit Salad

For the last 3 or 4 weeks our small group has been fasting on Wednesdays for the Advent season. Then, when we get together that evening, we break the fast by eating a meal together and discussing the book we are reading. It has been tough not eating on Wednesdays and it makes the day seem a lot longer, but I have noticed that I am thinking more about what this season truly means and how blessed I am to have the things and people in my life that I do.

Each night a different couple has brought the dinner and last Wednesday was our turn! Audra (one of the group leaders) is a vegetarian so it was a bit tricky picking out meal options that she could eat as well. Here is what we prepared: ham and cheese party sandwiches, vegetarian crock pot potato soup, and fruit salad.

Here is the ham and cheese party sandwich recipe I used (and doubled since we had a lot of people to feed):

1 12 count package Kings Hawaiian Rolls
12 slices swiss cheese
12-16oz thin sliced ham
1/2 cup butter melted
1 tsp ground mustard
1 tsp poppy seeds (optional)
2 tsp onion flakes (or 1 tsp onion powder)
2 tbsp worcheshire sauce

Place ham and cheese on the bottom of the sliced rolls. Cover with the top half of roll. Mix together the remaining five ingredients in a small bowl and spoon over the tops of the sandwiches. It will look like you have too much, but just dump it all on there. Let sit overnight or a couple of hours. Bake in a pre-heated oven at 350 for 15 minutes or until warmed through and the cheese is gooey and melty. These turned out very yummy!

I decided to go with a crock pot potato soup recipe since we had to work that day. It was very simple and turned out delicious.


First, use a 6 quart crock pot and peel and cut a 5 lb. bag of potatoes.


Then add 1 large onion, diced, 4 cloves garlic, minced (I used a little more than that), 2 teaspoons seasoned salt, 1/2 teaspoon black pepper, 1/8 teaspoon cayenne pepper (I used crushed red pepper flakes).


Next, add 8 cups vegetable stock since the recipe is vegetarian!


Cover and cook on low for 8 hours or on high for 4 hours. The potatoes should be fork-tender.


Once that is done, cut 16 ounces of Neufchatel cheese into blocks and use an immersion (we used a hand blender with the immersion attachment) to puree the soup.

Finally garnish with shredded sharp cheddar cheese, chives or green onions, and bacon bits. The soup was a little thinner than we imagined for potato soup, so we added a SMALL amount of cornstarch/water mix and it was just perfect! I highly recommend trying this recipe next time you have a big crowd to feed.


Finally, we look along a fruit salad so Audra would have something else to eat! Ha. This turned out to be delicious and we had extras that stood up in the fridge for a couple days after. Here is the fruit salad recipe I used:

1 (20 ounce) can pineapple chunks, juice reserved
2 apples, peeled and cored
1 (21 ounce) can peach pie filling
2 bananas, peeled and diced
3 kiwis (I used grapes)
1 pint strawberries (I did not use since they are ridiculously priced right now!)

In a small bowl, toss the chopped apples in reserved pineapple juice. Allow to sit for 5 to 10 minutes. In a large salad bowl, combine the peach pie filling and pineapple chunks. Remove apples from pineapple juice and add to pie filling and pineapple mixture. Add chopped bananas to reserved pineapple juice and let sit for 5 to 10 minutes. Add chopped strawberries (if you used them) and kiwi (aka grapes in this case). Remove bananas from pineapple juice and add to pie filling mixture. Chill and serve.

**Be sure to add the apples and bananas to the pineapple juice because it helps them not turn brown! Genius.

1 1/2 years down...


Well, today Taylor completed 1 1/2 years of graduate school! I can hardly believe next May he will be done with 2 years and that we will have been in CU for that long. Wow, time flies :) To celebrate another semester completed, tonight we are heading to Cracker Barrel for dinner. Ha! I asked where he wanted to go eat and that is what sounded good to him, so that is where we shall go. After dinner we plan on watching the Biggest Loser finale and just spending time at home. Really exciting celebration, huh? :)

Important

The other day I walked over to Taylor's building during lunch. It's only a street over so it's nice to be able to have lunch together. Normally we eat in the downstairs portion of the building where there are a whole bunch of tables. So I called him once I was inside and said, "Hey, I'm downstairs". He had a kind of serious tone when he replied, and said "Come up to my office, I have something really important to show you".

I figured I was going to see a new crystal he had grown or something cool he had discovered about his lab. Little did I know that the "important" thing he needed to show me was this...

Ha! I do have to admit that's a pretty impressive game of Minesweeper and yes, he did finish without hitting a mine :) Hope you had a great weekend!

Oh Christmas Tree!

Last night we put up our Christmas tree and I just love the way it looks in the living room now!


In my family, it is a tradition to put your first baby rattle in the tree each year. Here is my rattle, a set of car keys! I always find this a little funny since I don't like to drive at all.


In Taylor's family, the tradition is the night you put up the Christmas tree, you also make biscuit donuts. Obviously, this is a tradition I will be glad to continue :) We also invited Laine and Andrew over to watch the Bedlam game (Go Pokes!) and eat donuts. These were so delicious! Taylor did a great job making them.

It was a little tricky finding a place to put the tree in the living room, but we settled for next to the chair beside the TV. It will be a sad day in our house when the tree has to come down, I just love it!

Only 21 days until Christmas! I need to get some presents under that tree :)

He needs 2! Haha. The other night he was looking up lectures on YouTube, about some physics concept I will never be able to pronounce, and I looked over to see he was using the TV screen as well! I guess once you make it to grad school 1 computer screen doesn't suffice anymore :)

Christmas Lights!

A couple weekends ago we decided to put up the Christmas lights on our house. It is just supposed to get colder here so we figured we, I mean Taylor :), would go ahead and put them up. We just turned them on Monday night and I just love them!


Taylor had to get up on the roof! I never realized how steep the roof was until he was up there.


There is something about coming home to lights that just makes me happy!


I can't believe it's almost December! Christmas will be here before we know it :)

Thanksgiving Weekend

Hope y'all had a great start to the week! So last Wednesday we got all packed up and headed to Arkansas for Thanksgiving. We were both so excited to get away from CU for a little bit and spend time with family. We go to AR around 8:30 Wednesday night and headed to Copeland's for dinner. Taylor has been craving that for awhile so he was very excited!

Thursday was a nice and relaxing day. We slept in, had a yummy breakfast, and then stuffed ourselves all afternoon with turkey, stuffing, sweet potato casserole, and all those delicious Thanksgiving staples! Julia baked an apple pie from scratch and it was soooo good. I just love apple pie at Thanksgiving.

Friday we woke up and got ready to watch the Arkansas game. I've never gone Black Friday shopping, but I did order some new tights from Gap. They should be here soon and I'm so excited. This was Taylor's main position throughout the game...


Julia and I ran to Dillard's and Old Navy at the beginning of the game, so we missed the first couple touchdowns Arkansas scored, and then when we got back everything kind of went downhill. Ha! I think we might have jinxed them :)


After the game, we headed to Little Rock to watch Taylor's cousin play in his last high school football game. I have not been to a high school football game in over 4 years so it was fun! Saturday Susan, Julia, and I went to Taylor's cousin Kathryn's baby shower. It was so much fun and she got a lot of really great stuff. After the shower, we just spent the rest of Saturday hanging out with family and relaxing.

Sunday we made the 8 hour drive back to CU and got in around 6 after being delayed in traffic for almost an hour. It was such a great weekend and we are so thankful to have wonderful family to spend each holiday with!

Trick or Treat

I know this is really late, but oh well...

I was so excited this Halloween to actually have trick or treaters since we are in the house! Last year, in our apartment, I had a huge bowl of candy ready and we had a total of ZERO trick or treaters. It was such a bummer :( I could hardly believe it! This year I was a little more positive we would have at least a few kids stop by and yes we did!


Our official city trick or treating time was 6-8pm and by about 7pm I thought we were going to run out of candy! We had around 30 or so kids stop by the house and it was so much fun. There were kids of all ages (even a 15 year old girl who I seriously thought about not giving candy to) and all kinds of costumes! This one little girl was dressed as a ladybug and was just adorable. Taylor and I were talking that night about how our neighborhood is perfect for trick or treating since the houses are so close together, you can hit a lot of houses in a really short amount of time! Ha.

We also went over to Laine and Andrew's that night and made caramel apples and watched a Harry Potter movie to celebrate Halloween. Hope you all had a fun Halloween as well!

Taylor's Blog

Hi there! Sorry for being MIA lately. Life and my laziness just got in the way of blogging. I am working on a few posts of what we have been up to lately, but I thought I would share a blog post Taylor did recently for our local Seminary. One of the professors at the Seminary is our small group leader and he asked Taylor to write a post for their blog about his research and how that relates to his faith. I thought Taylor did a great job with the blog so here it is...

"Have you ever exchanged your money for a different currency? You give a person your money, only to receive less in a different currency. Seems inefficient, right? To me, it seems that what you give, you ought to receive with no loss. A similar scenario happens to you every day. It happens every time you plug in your power cord for your hair dryer or electric razor. You pay for the energy supplied to the wire, but not all of that energy goes to your machine. Some of it goes to heating up the conducting wires that carry the energy, but you aren’t using that heat. It’s just energy lost. But, there is hope. One hundred years ago, Heike Kamerlingh Onnes discovered that at extremely low temperatures, some materials don’t lose energy to this heating. In fact, every bit of the energy you put in is converted into current. This new state of matter is called superconductivity. There is a catch, though. These temperatures are extremely cold. The highest temperature to date that a material becomes superconducting at normal pressure is -216 degree Fahrenheit. Yes, you read that correctly. It’s negative and crazy cold.

Let me take you through a very ideal experiment to that illustrates what happens with this type of material. Take a certain metal you know that is superconducting. In your lab, you have a fancy refrigerator that can get to these cold temperatures and a device that measures the heat that is lost. You turn on the refrigerator and you tell it to start cooling down to its lowest temperature. Meanwhile, you constantly measure this heat. The heat is continuously dropping as the temperature is dropping, but it is still not zero. All of a sudden, at a certain critical temperature, the heat discontinuously dropped from a number, say 25, to 0. It didn’t hit 24 or 13 or 9. It went from 25 to 0. Now, we say it’s a superconductor.

You can imagine the potential applications for superconductors. If we could find materials that become superconducting at normal temperatures, things would radically change. The energy crisis we currently face may cease to exist. Transformers along the road that solely boost the energy in the cables would be unnecessary. Your electricity bills would be less.
This is what I study in the Physics Department at the University of Illinois. I am trying to understand why some materials become superconducting at these “higher” temperatures. If we can understand why, then our hope is that the answer would lead us to discover or make materials that are superconducting at normal temperatures.

However, my ultimate motivation for studying this phenomenon is not so that we can get more bang for our buck. At the risk of sounding cheesy, I study this phenomenon because I believe it’s my calling at this stage of life. In fact, I realized my calling as a scientist when I was working on a paper for a religion class. For that paper, I spent many hours of research gathering evidence to support my belief that science and theology are not in contradiction regarding creation. My calling didn’t come from an audible voice or a billboard sign. No, it was from hours of intense and honest reading of God’s word.

In Matthew 22, Jesus says that one of the two greatest commandments is to “Love the Lord your God with all your heart and with all your soul and with all your mind.” In order to love God, we must know God. I believe we come to know God when He reveals Himself through His Word, the Holy Spirit, visions, dreams, fellow Christians, prayer, and even His creation. By studying God’s creation, which includes materials that become superconducting, I can learn of God’s attributes. I know you may think this is a bit of a stretch, but let me explain this a little more. The way these materials behave is governed by laws, laws that God has set in place. When I look under a microscope or study light scattered from these materials, I may not directly see God, but what I do see is God’s hand at work. He controls every electron. I believe He cares and is involved in these small events that happen on the microscopic scale. How much more, then, does He care about what happens on the macroscopic scale, the things that we experience and see?

This provides a Godly calling for my work as a scientist. The more I learn about the universe and its workings, the more I realize how majestic and awesome He has made it. Paul says in Romans 1:20 that humans cannot help but see “God’s invisible qualities” in his creation. Science, then, enables me to understand more about God and love Him with all of my heart, soul, and mind."

Sports, Chicago, and Birthdays

Lately I have been really bad about taking photos, even more than normal, thus my lack of blogging. I did take a few of last weekends activities, so I'll catch you up on what we have been up to...


Did you know that Illinois is the #1 ranked volleyball team in the NCAA and is the only undefeated team in the nation? Also, did you know it's free to go watch them? Well last weekend that's exactly what we did! It was homecoming weekend so the hall (where they play) was completely packed. We showed up about an hour early and I'm glad we did because about 15 minutes after we got there you could hardly find a seat! They are so fun to watch and it's amazing tall they are. Most of the starters are over 6' 2"!


There is a course about an hour and a half south of us called The National that used to be one of my clients at the station. I got to play the course once during the summer and have wanted to take Taylor down there ever since. It's in the middle of a state park so there are lots of trees and the whole course runs along a lake. So last Sunday we finally went down and played!


It was a beautiful day and in the mid-60s all day!


Taylor loves seeing deer on the golf course, so he was in heaven during the round. No joke, we probably saw around 20 deer. I had told him about all the deer I had seen when I played, but I don't think he fully believed me until that day. And they will let you get soooo close to them! Sorry, it's a little difficult to see the deer but it's right in the middle of the picture.


About hole 15 our cart started to slow down and the battery light kept coming on and then going off. We called the clubhouse and they said the cart should make it back. Well, right after you finish 18, you have to drive up this big hill to get back to the clubhouse and of course the cart died. So Taylor ended up pushing it back!

This past week we started a new small group on Wednesday night with our church. We are meeting over at a couples house with about 7 other people and I think we are really going to enjoy the discussions. I also got to go on my first high school visits and college fair on Thursday! I am really enjoying my new job and am so thankful I got this opportunity.

We headed up to Chicago this weekend to see my friend Danielle who was running the Chicago Marathon and hang out with our Chicago friends! We left Friday after work and headed back this morning. Today has been filled with laundry, a Walmart run, a golf round for Taylor, and relaxing.
